Elderflower champagne and cordial

I have relented and decided to give elderflower a second chance. There has been much talk on various forums of the delights of elderflower. Now while I am in no way doubting them I just can't get over my mental blockage of the taste and smell. Many years ago we made elderflower wine, of all the different recipes we experimented with, elderflower was the only one to be poured down the sink and the smell remains with me until this day.

However looking forward and trying to think positive we now have a bowl of elderflower mixture soaking/infusing ready to be turned into cordial tonight and another bowl that tomorrow will become our champagne.

The champagne recipe is one of Colour it Greens. Both will go towards my 52 recipes.

I've just set another batch of cordial to infuse and the champagne I made last week seems to be going fizzy. Not too sure when to try it but hopefully this year it won't explode!! I keep meaning to try CiG's elderflower fritters but never seem to get around to it - tomorrow maybe ....

How long between bottling it and putting it in the fridge once the bottles are tight, do you think ?
